RV Cooking – Delicious Shrimp, Avocado, and Tomato Salad

With limited space available in RV kitchens, simple RV cooking is the way to go. This is one of my favorite quick and easy lunch or dinner recipes. It goes together in a flash and is fresh, bright, and oh so good.

I make this when I get to do a Costco shop. I buy the shrimp from the deli counter. They are pre-cooked and come with cocktail sauce. They are without question, the best shrimp I’ve ever eaten. They are sweet, firm, and always very fresh.

Kitchen Helpers

I love this little herb stripper for removing the herb leaves from the stems. It works great with cilantro, rosemary, thyme, and lots of other herbs.

Shrimp, Tomato, and Avocado Salad – RV Cooking

  • One ripe avocado, diced
  • 8 to 10 cherry tomatoes, sliced in half
  • 10 to 12 large cooked shrimp, I cut mine in half
  • 1 Tablespoon olive or avocado oil
  • 1 Tablespoon lime juice
  • Cilantro
  • Sea Salt
  • 1 clove garlic crushed (optional)

Mix it all together and enjoy!
