RV Cooking – Delicious Thai Chicken Pizza

RV Cooking means cooking in a very small space. It can be frustrating at first but you’ll adjust given time. This recipe lends itself to camper cooking because it doesn’t require a ton of prep space and you can bake it in your oven, on the grill, or even over a campfire.

Back when my late husband and I lived in Olympia, there was a pizza restaurant that has a Thai Chicken Pizza that was to die for. I make a clean version with no soy, gluten, or dairy.

I use brown rice tortillas for the crust. They are thin so I use two and put the sauce in between. Of course, you can use regular pizza crust or anything you like for that matter. If you like Thai peanut sauce, you’ll love this.

RV Cooking – Thai Chicken Pizza

Gluten, soy, and dairy-free.

Sauce – combine the following well and spread over your crust.

  • 1/4 cup nut butter (I avoid peanuts)
  • 2 T Coconut Aminos
  • 1 tsp honey
  • 1/2 tsp fresh garlic
  • 2 tsp fresh grated ginger
  • 1 tsp rice vinegar
  • 1 tsp lime juice
  • 1/2 tsp ground lemongrass (optional)
  • 1/4 tsp red pepper flakes

Toppings

  • precooked chicken
  • sliced red onion
  • cashews or peanuts
  • shredded carrots
  • cilantro
  • Vegan cheese (I use Violife Mozzerella)

Bake at 425 degrees for 15 to 20 minutes and devour. You could also bake this on a Blackstone griddle or BBQ grill.
